The True Value of Fugu Guided by Aging and Handmade Ponzu

Natural fugu is carefully selected from the waters off Kyushu. It is aged meticulously in-house to maximize its umami. Instead of relying on chemical seasonings, we use handmade ponzu to enhance the flavor, which is the Fukuchi style. From fugu sashimi so translucent that the plate's pattern shows through, to each dish that embodies delicacy and tradition, the flavors deepen with every bite, revealing the essence of fugu.

In 1976, we started our business as 'Fugu Fukuchi' in Asakusa. Since moving to our current location in Higashi-Ginza in 1988, we have dedicated ourselves to serving the finest fugu cuisine. We continue to refine our discerning eye and craftsmanship honed over many years, and as a renowned establishment that captivates many customers, we certainly carry on its taste and spirit.

About the Chef

Ken Yasuga

Originally from Tochigi Prefecture. At the age of 18, he embarked on a culinary path and honed his skills as a head chef in Osaka and Tokyo. With a solid craftsmanship backed by rich experience, he elegantly brings out the flavors of natural tiger pufferfish. Currently, he is refining his skills alongside his daughter, aiming for even greater heights while respecting tradition—this sincere attitude is embodied in each dish at Fukuchi.
